Correctional Facilities

The following is a partial list of Penal Institutions in which we were listed as Food Service Consultant and had responsibility from planning to final acceptance.  This distinction is made since we are often called upon for assistance on specific areas and/or problems after the project is in progress.

Tacoma Pre-Release Facility - Puyallup, WA

• New Facility with 400 bed capacity, designed to allow for 200 bed expansion.  Cafeteria service

Indian Ridge Youth Camp - Arlington, WA

• Remodel of Facility-80-100 bed capacity, designed to allow for 100 bed expansion. Cafeteria service

Kitsap County Youth Services - Port Orchard,WA

• New Facility with 80 bed capacity, insulated containers on special carts deliver bulk food to each day room of 10 bed modules.  Family style meals served.

North Idaho Correctional Institution - Cottonwood, ID

• Remodel of Kitchen, Bakery and Storage Facilities to ease congestion, to improve production, traffic flow and increase Bakery production.

Washington Correctional Center for Women  - Purdy, WA

• Remodel facility to accommodate additional 300 person Minimum Security Prison.  Main Kitchen remodeled to include Cook/Chill and new Serving Kitchen on Minimum Security campus.

King County Youth Services - Seattle, WA

• New facility with 150 bed capacity, insulated containers on special carts deliver bulk food to each day room of 10 bed modules and family style meals served.

Madera County Jail - Madera, CA

• New facility with 400 bed design, inmates trays pre-dished on conveyor line in Kitchen.  Meals delivered to 48 seat Day Rooms in special carts, Food Storage, Dry and Cold, sized for 90 days inventory.

Mission Creek Youth Camp - Belfair, WA

• Remodel Kitchen/Dining to improve service and menu for 120 to 150 residents, plus staff.  Remodel executed without shut-down of food service.

Washington State Penitentiary - Walla Walla, WA

• Remodel Kitchen/Serving - Medium Security Building to improve production, traffic flow and increase serving line movement.  No expansion of the building.

Spokane County Correctional Facility - Spokane, WA    

• New 500 bed facility, inmates trays pre-dished on double tray make-up lines in kitchen. Staff and Trustees work in Kitchen, each cell block has dining for 46.

Snohomish County Detention Facility - Everett, WA           

• New facility for 277 Detention and 60 Work Release.  Total population 337 with 25%growth factor.  Meals delivered in bulk to Serving Station in each dining area for dish-up by staff.

McNeil Island Correction Center - McNeil Island, WA             

• Remodel Staff and Main Dining Scullery's Main Dining Scullery relocated to improve traffic flow and to accommodate 700 to 1000 residents.

Naselle Youth Camp - Naselle, WA                    

• Remodel Kitchen/Dining Building into Kitchen/Dining/Commissary to provide food service for 120 residents and 75 staff, with projections of 150 residents and additional staff.  Cafeteria type service with self-serve Salad Bar and Beverage Station.  Remodel executed without shut-down of food service and increase dry and cold storage facilities to reduce operating costs.  Upgrade facilities, using existing equipment where possible.

Clearwater Honor Camp - Forks, WA                    

• New facility, 120 bed capacity, 20 staff.  Food Service Building consisting of Kitchen, Dining space and Visitor's area Cafeteria line primarily self-service.  Developed system for supplying beverages to dormitory in vandal proof containers.

Pacific County Public Safety Building - South Bend, WA

• New 26 bed facility, inmates trays pre-dished.  Delivered to Day Rooms on Shelf Cart.

Benton County Justice Center - Kennewick, WA       

• New facility with 104 bed capacity, day room feeding for men and women.  Food service for Work Release Program Meals delivered in insulated trays, pre-dished in kitchen.

Kitsap County Jail - Port Orchard, WA 

• Addition to courthouse, upgraded to 100 beds, dayroom feeding on upper floor from kitchen.  Special cart, sized to fit elevator, delivered and dispensed full meals.  Maximum Security prisoners fed in cells from carts.

State Jail - Fairbanks, AK   

• New facility with 192 beds, dining room feeding for approximately 128 men in two shifts.  Those confined to cells, are fed in their cell , via cart delivery.  Cafeteria line service and self scrapping dishwashing system with monitored flatware count.

Monroe State Reformatory - Monroe, WA                      

• New Dishwashing Facility and Bakery.  Dishwashing area designed for higher capacity with less personnel to operate, improved traffic patterns for inmates entering and departing Dining Hall.  Bakery area developed for Vocational Training and to supply baked goods for Dining Hall.

Washington Correction Center - Shelton, WA        

• Remodel Facility.  Addition of 1000 residents and 500 staff.  Combination Dining Room feeding and tray delivery to Maximum Security and Infirmary.

State Jail - Juneau, AK        

• New Facility with 192 beds, dining room feeding for approximately 128 men in two shifts. Those confined to cells, are fed in their cell, via cart delivery.  Cafeteria line service and self scrapping dishwashing system with monitored flatware count.
